Purple Yam Buttermilk Pancakes

We Filipinos are crazy about Ube [oo-beh] or purple yam! We have it on almost every dessert, other cuisines will serve yam as a side dish with a savoury dish but Filipinos love Ube sweet. We have it on cakes, ice creams, candies and even bread. The possibilities are endless…haha!

Here’s a quick pancake recipe that I hope you will like. It’s basically a simple buttermilk pancake with ube essence. Cooking panckes should be easy and not complicated.

I bought my Ube essence bottle from a Filipino supermarket in Earls Court in London. I haven’t seen them being sold anywhere else but check Chinatown too just in case they have it. All the other ingredients are pretty easy to find.

Ube Pancakes

Ingredients

260g plain flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate soda
1-2 tablespoons sugar
400ml buttermilk
1 large egg
1 teaspoon ube essence
pinch of salt
2 tablespoon unsalted butter, melted

Instructions

In a large bowl add flour, baking powder, bicarbonate soda, sugar and salt. Mix them all together.

Add egg, ube essence, unsalted butter and buttermilk into a bowl. Mix them well.

Add wet mixture into the dry ingredients. Mix well but don’t over mix them. You will notice that it will be a little lumpy it’s fine, not over mixing it will keep the air bubbles in the mixture and this makes it fluffy and light.

Heat some oil in a medium frying pan. Place ube pancake batter into the frying pan, cook until the top is bubbling, turn the pancake to the other side and cook for another 2-3 minutes more. Do this until all of the batter mix is finished.

I served my pancakes with some fried chicken and maple syrup but you can serve it with some butter and maple syrup is you like.

    so good! i added one more tbsp of sugar and a splash more of ube essence and it was amazing!! i also added add ins like chocolate chips, bananas, and shredded coconut- the best! the coconut compliments the ube so well. i recommend adding it! thank you1
