Onion Atchara
Traditionally Atchara is made with green papaya which is eaten alongside either a fried, roasted or grilled food/seafood. Today I also added it to my salads! Which gives my salad depth of flavours.
I have a few atchara on my website too! Including carrots, papaya and cucumbers.
Ingredients
1-2 red onions
1 inch ginger
2 garlic cloves
150ml apple cider vinegar
2 teaspoons salt
1/2 teaspoon honey
1 pinch ground black pepper
Instructions

In a jar add the apple cider vinegar, salt, pepper, honey and black pepper. Next add thinly sliced red onions, minced garlic and minced ginger.

Put the lid of the jar and give it a good mix. You can serve this straight away or keep it in the fridge for a week.
