Morcon

Crispy Air Fried Chicken Stuffed with Hotdog, Cheese, Pickle Jalapeno and Boiled Eggs

Why the same name but not Morcon looking? HAHA! Don’t worry you came to the right place.

In case you didn’t know, the Philippines was colonised by Spain, so there are many things in our culture that sound Spanish. Including Morcon, we share the same name but they are both different dishes. 

The Spanish Morcon is a shtick Sausage, the Philippines Morcom is more of a beef roll or roulade that is stuffed with ham or bacon, eggs, cheese, pickles, raisins, strips of fat and liver. It is then braised, baked, roasted or boiled slowly then served in a thick tomato based gravy. Each Filipino will have their own version depending on what stuffing they like best.

In this recipe I added Filipino hotdog, cheese, pickled sweet jalapeno and boiled eggs. I also airfried the Morcon which turned out so delicious!

Morcon can be eaten cold or hot and served as a starter or sharer. In the Filipino community, communal eating is the usual way we eat together. Sharing food with our family and friends.

Morcon - Food with Mae-3

Ingredients

2 chicken breast
3-4 Filipino hotdog
100g cheddar cheese
2-3 pieces pickled sweet jalapeño
2 hard boiled eggs, quartered
Strings for tying

Marinade

100ml soy sauce
50ml orange juice or pineapple juice
2 tablespoons lemon or 20ml calamansi
1 pinch ground black pepper

For Frying

2-3 eggs
200g flour
200g breadcrumbs
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
½ teaspoon ground black pepper
Oil for frying

Instructions

Using a large container or bowl, make the marinade, add all of the marinade ingredients in the bowl and mix them well. Put this aside for later.

Slice the chicken in half and use the meat tenderiser to flatten it thin but be careful to not break the meat. Place the meat in the marinade and cover it. Leave it to marinade in the fridge overnight or 1-2 hours.

Once marinated, take the chicken out of the marinade onto a clean plate. Keep the marinade for the sauce later. Add the sliced, hotdog, cheese, pickle jalapeno and boiled eggs. Roll it like a spring roll and tie them using the string. Do the same with the other chicken breast.

Next you need to prepare the chicken for the air fryer. Coat the chicken breast rolls in flour, then dip it into the eggs, making sure that it’s covered in eggs, and then roll it in breadcrumbs. Do this to both chicken rolls. Place them in your air fryer try, spray them with oil and cook on 160C for 20 minutes. Then turn the heat up to 180C for 10-15 minutes.

To make the sauce, heat some oil in a pot and saute some garlic. Add passata, marinade, tomato paste, ketchup, sugar, salt and ground pepper. Mix them well together, bring it to a boil on high heat, then turn the heat to low and simmer for 15 minutes. Taste the sauce and adjust the salt and sugar to your taste. Then turn off the heat.

Take the chicken out of your airfryer and leave it to the side for 5 minutes to rest uncovered. Then, slice the chicken into discs, take the strings out before serving.

In a serving plate, add some of the tomato sauce, then some of the sliced chicken on top of the sauce. Serve while it’s warm or cold.
