Banana & Jackfruit Fritters Glazed with Caramelised Sugar

Turon (also known as banana lumpia) is a popular Filipino snack or dessert. It’s made by wrapping slices of ripe banana, usually saba banana (a variety native to the Philippines) in a spring roll wrapper, often with a bit of jackfruit (langka) for extra flavor, then rolling it up like a lumpia (Filipino spring roll) and frying it until crispy.

It’s usually coated in caramelized brown sugar during the frying process, giving it a sweet, sticky, golden-brown glaze.

Ingredients

2 ripe plantain
100g ripe jackfruit
100g – 150g brown sugar
16 small springroll wrappers
150ml cooking oil
1 egg or 1 teaspoon with some water (paste)

Instructions

First, slice the ripe plantain (or saba just quarter it) in into 3 inches long & quarter it. Then, julienne the jackfruit. Separate some spring roll wrappers so it’s ready. Leave it on the side for later.

Using a clean plate, place a spring roll wrapper, add some banana, a few jackfruit and roll it. Just like a spring roll and seal it with eather egg or flour paste. Do this until you finish all the banana and jackfruit.

Using a frying pan, heat some oil on medium, enough to cover half of the fritters. Turn the heat to low. Slowly add the banana rolls and fry one side and then turn the otherside. Sprinkle some brown sugar and let sugar melt. Once it’s melted move the banan fritters around to cover all the sides.

Take out the banana fritter and place them into a clean plate. Leave it to cool down before eating (if you can wait haha).
