Banana Fritters with Saba

Maruya also known as pamaypay. Pamaypay a type of traditional hand-held fan from the Philippines. It’s called this as the banana is shaped like a fan.
To me this is a nostalgic snack, when I was growing up in the Philippines, maruya is being sold on the streets in the afternoon and you can smell the banana being fried from my school. I couldn’t wait for recess or break so could line up and buy some.
Maruya is not only a tasty snack, it’s easy to make with only a few ingredients needed.
You can eat this as a snack or dessert. I love pairing warm/hot maruya with some ice cream!

Peel the saba by cuting off the top and tail then peeling the skin. To make a fan shape, slice the banana from the tip down to the bottom but not all the way through. Do this 4 times and slide each layers to make a fan shape OR you can slice through to make individual slices too. Do this to all the saba and leave it ok the side for later.
In a bowl, add all the ingredients; flour, cornflour, eggs, sugar, salt and water. Mix them well until incorporated. It should have a thick but still runny consistency.
Heat some oil in a frying pan on medium heat.
Take a sliced banana, dip each side into the batter and place it into the frying pan. Fry each side until golden brown.
Take the banana off the oil, let the oil drip or pat the oil with kitchen paper. In a bowl, add some sugar, take the fried banana and cover it with sugar on all sides. Serve it as it is or with some ice cream.
