
Spinach and Banana Pancakes
Pancakes that you won’t feel too guilty to eat!
If you have been following me, you know that I have a special place for pancakes in my heart and belly. I love them so much! Savoury and sweet pancakes!
This recipe is a great pancake to make as it’s got ingredients that are good for you. This year (2025) I have been more conscious in choosing the type of food I eat as well as the ingredients I use for my cooking. This is because my stomach gets so bloated and inflamed at many things I eat now. So I’m trying to be more careful. I am also anemic now so spinach is a big part of what I eat on a weekly basis as well as having less sugar. Even less than what I normally have previously, so I’m always on a look out for alternatives hence why I added dates instead of sugar.

Using a blender, add oats, bananas, eggs, spinach and dates. Blitz until all the ingredients are blended and you get a batter texture.
Heat your frying pan, add the butter until it’s melted and move the melted butter around to cover the frying pan.
Cook the pancakes on medium to low heat until the bottom turns a little golden brown and then turn it over. Once the other side is also a little golden brown, take them off the heat. Do this until all the batter mixture is cooked.
Serve your pancakes warm or cold with your favourite toppings!
