Pinoy Pancakes
Colourful Pancakes with 4 flavours, Ube (purple yam), Mango, Plain and Pandan flavours. Stack them up anyway you want it!
We love this recipe, it reminds me of a Filipino delicacy called ‘Sapin sapin’ which means layers. It’s what inspired me to come up with this pancake recipe and concept. It’s so lovely and colourful, its inviting and of course taste great.

In a large bow, mixix all the ingredients except for the flavourings. Once mixed, divide the mixture them into 4 bowls. Each bowl for each flavour and 1 plain. Next, add the flavours in their individual bowls and mix well.
Using a frying pan cook them on low-med heat with some butter or oil to grease and stop the pancakes from sticking to the pan. Pour some pancake batter into the frying pan, I cover them for the first half when cooking to make sure it cooks through. Flip it when it’s ready, cook for a minute and it’s done. Take it out of the frying pan and into a serving plate.
Repeat this until you cook all of the batter. Serve them with your favourite toppings!
