Sourdough Ube Waffle

Purple Yam Flavour Waffles

What is Ube?

Ube, meaning tuber in the Filipino language, is a purple yam originally from the Philippines. Different from the purple sweet potato, it has an even sweeter, more mellow taste and has a slightly nutty, vanilla taste. Ube is popularly used in desserts in Filipino cuisine, often boiled and then mashed with condensed milk.

Ube is less starchy than a traditional yam and can be combined with ingredients like condensed milk to create an even sweeter, smoother, and creamier flavor.

DON”T mistake Ube with Taro or Sweet Purple Potatoes! 

Despite their similar appearance taro has a softer, slightly nutty taste but is not naturally purple, has a more neutral flavour and are commonly used in savoury dishes. The purple sweet potato, on the other hand, is much denser and drier, with an earthy sweetness. It’s most commonly roasted or baked and served in savory meals rather than desserts.

How do I make a sourdough starter? I haven’t written a recipe for my own starter yet as I am still starting out but here’s a recipe from The Clever Carrot

Milk – I used whole cow’s milk but you can use any milk you prefer.

Sourdough Ube Waffle - Food with Mae-3

Ingredients

250g plain flour or AP
1 large egg
250ml milk
2 tablespoons melted butter
3 tablespoons greek yoghurt
100ml sourdough starter
2 ½ teaspoons baking powder
1 teaspoon bicarbonate powder
1 pinch of salt
3 tablespoons granulated sugar
2 tablespoons ube essence
3 tablespoons melted butter for cooking

Instructions

In a large bowl add all the wet ingredients first, egg, milk, yoghurt, sourdough starter and ube. Give it a good mix. Then, add the dry ingredients, baking powder, bicarbonate of powder, salt, and flour. Mix them until incorporated.

Heat your waffle maker, once it’s ready, spray or brush it with butter. Pour some of the ube waffle mixture. Cook it for 3-5 minutes. Do this until all the ube waffle mixture is finished.

Serve warm or cold with your favourite toppings.
