Mangoes, Strawberry and Spinach Salad

When you think of salad you automatically think it’s just vegetables. I don’t know about you but I have always made some mango salad at home and even my mum makes this too especially in the summer months in the UK.

Mangoes or fruits make the salad more interesting and refreshing! It really makes a difference when you are serving some barbecue meat or fried foods.

I was given some Philippine Mangoes recently. YASss! I know right! You can get Philippine mangoes now here in the UK. You can use any mangoes available to you.

There are many great olive oil out there and balsamic vinegar but these (see above) are what I used for this recipe. This is not sponsored.

Ingredients

1-2 ripe mangoes
150-200g strawberries
5 tablespoons olive oil
5 tablespoons balsamic vinegar
1-2 pinch of salt
Coriander to garnish, optional

Instructions

Firstly wash the fruits and vegetables, then dry them. Slice the mangoes into cubes and scoop them out, then for the strawberries take the top off and half them.

In a platter or bowl, arrange the spinach evenly on the plate, add the strawberries and mangoes on top. Season them with salt and pepper, then drizzle it generously with extra virgin olive oil and balsamic vinegar. Then garnish it with some coriander leaves and serve.
