Fried Rice with Molo Fillings

I cook most of the day during the week for my instagram content or for the family and often I have plenty of left overs. I keep them in the fridge or feezer to preserve them and not to waste them.

As a mama of two, I sometimes don’t want to spend too much time in the kitchen. Sometimes I have work to finish or sometimes I help with homework or I’m just tired at the end of the day. My husband Adrian does do some cooking sometimes but there will be days when he can’t cook. This type of cooking is quick and easy to make plus delicious too that everyone can enjoy.

I grew up dirt poor in the Philippines with no food sometimes, although I was young then. My mama always reminds me how she struggled to feed me sometimes. She doesn’t like people to know this but I think it’s important that my children knows this story as it will help them keep their feet on the ground. It pushed my parent to seek a better future by going to work abroad.

I hate food waste and I feel really sad having to throw away food or see other people throw away food. I always try to salvage food in the fridge and re-invent them to another delicious meal.

Fried rice seems like the best way to re-purpose food so I thought I’ll share how I made it this time to encourage you to lessen food waste. By the way this is not some campaign but something I truly believe in.

Please find the recipe below. Also note that measure varies on what ever you find in the fridge so it’s not exact but its an estimate.

Molo fillings – I had this sitting in my freezer. You can use any protien you may left in the fridge. No proper measurement really for this.

You may add any other ingredients that you find in your fridge, it might be completely different to what I have listed.

Garnish is optional.

Ingredients

200g prawns and minced pork (molo fillings)
350g-500g rice
1 small onion
3 garlic cloves
2-4 teaspoon soy sauce
2 teaspoon oyster sauce
1 pinch black pepper

Garnish (optional)

2 stems spring onions
chilli oil
atchara
