No Churn Purple Yam Ice Cream

Ube or Purple yam has to be the top flavour of desserts among Filipinos, as a people, we are obsessed with Ube. Other countries use purple yam as a savoury dish, something to complement a meaty dish but Filipinos use it as a dessert ONLY. From cakes, ice cream, candy, steamed cakes, sweet sauces and many more. I think there is even a cafe inspired with Ube all over the menu. Now that is heaven!

I know not many people own an ice cream churner so I adapted this quick and easy recipe from Nigella’s no churn vanilla recipe. Now you can make it in your own home whenever you crave it! The best thing about it is that you only need 3 things. Make it the night before, when you wake up the next day it’s ready and you can even have it for breakfast if you want.

Note: If you don’t have an electric mixer or hand mixer, you can use a whisk and mix the all the ingredients together until it starts to get thicken. Look at it this way, it’s an arm workout and you will be burning some calories off too! Haha!!

Ingredients

600ml double cream

350ml condensed milk

2 teaspoon ube essence

Instructions

Put all of the ingredients in a large bowl. Beat the mixture using an electric whisk until thicken but not stiff.

Scrape the mixture into a container or a loaf tin and cover it. Freeze for 8 hours or overnight.
