Triple Choc Coconut Pancakes

I confess, I’m a chocoholic!

I used coconut flour with this recipe with some bananas, cocoa, eggs, nutella and vanilla essence. You can order some coconut flour online and maybe in your local supermarket.

I never used to like chocolate before, when I was pregnant with my eldest daughter I craved chocolate throughout my pregnancy. Since then I love chocolate. This is a great recipe if you’re looking for an alternative ingredient to use instead of flour.

Ingredients

3 tablespoons coconut flour
1 large ripe banana, mashed
4 eggs
2 teaspoons cocoa powder
2 teaspoons nutella
1 teaspoon vanilla essence
pinch of salt
Chocolate sauce:
50g dark chocolate
25g unsalted butter
125ml double cream
1 tablespoon caster sugar
Strawberries for toppings (optional)

Instructions

Place all of the pancake ingredients in a large bowl (except the chocolate sauce ingredients). Using a hand blender, mix all of the ingredients.

Heat some oil in a frying pan and pour some pancake mixture into the pan. Cook until golden brown on each side. Do this until all of the pancake batter is finished.

To make the chocolate sauce, heat the chocolate in the microwave for 40 seconds or until it melts, add double cream, sugar and unsalted butter and heat it for another 40 seconds to 1 minute. Take it out of the microwave and mix it.

Serve the pancakes with chocolate sauce, strawberries and or maple syrup.
