Sinigang na Baboy

Sour Soup with Pork Belly, Tamarind and Vegetables

Ingredients

500g pork belly, cubed
1 onion, chopped
4 garlic, chopped
6 tomatoes, quartered
3 tablespoons of concentrated tamarind or more to suit your taste
200g green beans
1 bulb asian cabbage
1 tablespoon salt
1 tablespoon fish sauce
1 teaspoon ground black pepper
2 tablespoons oil

Instructions

In a medium pot on medium heat, add oil, next saute onions for a minute, then add garlic and saute for another minute. Add the pork, cook for 5 minutes, then add the chopped tomatoes and cook for 3 minutes. Pour some water into the pork, making sure you cover the meat or more if you prefer to have plenty of soup.

Season your sinigang with salt, pepper, fish sauce and tamarind (see above how I prepared the concentrated tamarind). Mix them all together, put the lid on the pot, turn the heat high and bring it to a boil. Once the pok is boiling, turn the heat down and simmer for 30 minutes.

Once simmered, add the green beans, cabbage and continue to simmer for another 10m minutes. When the vegetables are cooked, it’s ready to serve hot with some boiled or steamed rice.
